IN THE VINEYARD
Pinot Noir flourishes in cool climates, preserving its delicacy and high-toned acidity. Tasmanian conditions yield the finesse we seek for Bin 23 Pinot Noir. We source fruit for our Cellar Reserve Pinot Noir from Tumbarumba, nestled high in the Snowy Mountains.
These regions’ cool conditions mirror those found in Champagne and Burgundy, from where Pinot Noir originated.
By contrast, Grenache requires warmth to ripen fully. Bin 21 Grenache is sourced from the Barossa Valley, as well as storied vineyards of Mclaren Vale. The climates here are not dissimilar to the warm, dry regions of Southern Europe from where the varietal emerged.
THE PERFECT PAIRING
In warmer months, lighter‑bodied reds feel naturally at home on the table. They also offer an elegant bridge in a multi‑course meal, guiding the palate seamlessly from white wines to more powerful reds.
Acidity is sometimes overlooked when pairing wine with food, though wines with pronounced acidity are some of the most food friendly. Bright dressings or salty elements enhance a wine’s fruit profile while softening the acidity on the palate – pleasing effects which enhance the appeal of light reds.
Their versatility also extends to grills and heartier fare, such as duck and game. The cherry glaze or cranberry jus sauces we often choose for these dishes echo the wines’ red‑fruit profiles, bringing such pairings into elegant alignment.
