2011 Tasting Notes

Launched with the 1990 vintage in 1993, Penfolds Bin 407 was developed in response to the increasing availability of high quality Cabernet Sauvignon fruit. Inspired by Penfolds Bin 707, Bin 407 offers varietal definition and approachability, yet with structure and depth of flavour.

A textbook Cabernet Sauvignon, the varietally expressive Bin 407 highlights the rewards of Penfolds multi-region, multi-vineyard blending, with a core of ripe fruit supported by a sensitive use of French and American oak.

Bin 407 Cabernet Sauvignon was developed by former Penfolds Chief Winemaker John Duval, in response to market demand for a versatile cabernet sauvignon style that could be enjoyed for immediate drinking, or could develop well in the cellar.

With a couple of notable exceptions, quality cabernet sauvignon has only been widely available for a matter of decades. Many of these vineyards are entering the mature phase of their productive life and there is now a rich source of high quality fruit for Penfolds winemakers to draw from. 

The objective with Bin 407 has always been to promote cabernet’s varietal character, in tandem with the Penfolds house style. 

Providing a lovely contrast to the more powerfully structured Bin 707, Bin 407 is a restrained and elegant cabernet sauvignon style with clear, varietal black-currant/cassis aromas, fine-grained firm tannins and underlying cedar/savoury oak.

Penfolds Red in Class of Own Bin 407 Cabernet Sauvignon 2007

This is pure cabernet with aromas and flavours reminiscent of black olive, cassis and a tease of mint; these combine well with the oak. The palate is intense but elegant, with good flesh and the variety’s firm, gripping tannins.

Grape variety: cabernet sauvignon
Region: South Australia, including Coonawarra, McLaren Value and Langhorne Creek.
Maturation: 13 months in French and American oak, one-third new, two-thirds older.
